Is it a coffee? Is it a smoothie? It’s both! With this Peppermint Chocolate Coffee Smoothie, you will be getting the best of both worlds. You get your cup of joe but you also get some sweet flavors and protein to keep you feeling smooth and satisfied all morning long.
You will need a blender or a single-serve blending machine like the Nutri-Bullet for this recipe. If you want to be a generous friend and make 2 servings, just double the recipe! For one serving, you will need a ¼ cup of oats. We recommend old fashioned organic oats. Then it’s time to pulverize! Sounds fun, right? Throw your oats in your blender and blend, blend, blend your little heart out! You want your oats to turn into a flour-like consistency. After this, you can add your other great ingredients into your blender. One frozen banana, ¾ cup chocolate almond milk (Or you can use cacao nibs and regular almond milk together),1/2 cup of cold coffee and ½ tsp of peppermint extract. Ahh, minty fresh! Peppermint not only tastes pretty amazing, but it has some pretty neat health perks too! Peppermint has been used for decades for its calming properties. It’s great for relieving headaches, nausea or a sour stomach. Who would’ve thought?
You can also choose how thick or thin you want your smoothie. If you like a thicker blend, use more banana than the recipe calls for. If you like something thinner to sip on, use less! We use almond milk in our smoothie, but you can use regular milk, or if you are dairy-free, you can try any other plant-based milk like cashew milk, hemp milk or even coconut milk.
If you are using cacao nibs to flavor your almond milk, smart thinking! Believe it or not, cacao nibs are the raw and unprocessed form of chocolate and are considered a superfood! Yeah, really! Not to be confused with “cocoa nibs”, cacao nibs are rich in magnesium, iron and fiber that will keep you feeling nice and full until your next chow session! Cacao nibs also pack a pretty mean punch of antioxidants too, which fight free radicals (All those yucky things we don’t want in our bodies!).
For our coffee, we use Curiosity Coffee “Sumopian Blend”. Curiosity Coffee stemmed from, well, curiosity! This company wanted to experiment awhile to get the best tasting coffee around. Curiosity Coffee combined the deep, rich complex graham and citrus notes of Ethiopian coffee beans with the bold, herbal and earthy aromas of Sumatran beans. Enter, “Sumopian” blend! Very unique and worth giving a try!
