Forget fast food. How about just great food, fast?? This Quinoa, Pear and Spinach Salad is so easy to whip up and stack right into your 20oz. Healthy Human Cruiser Tumbler. Convenient, quick and perfect on-the-go! If you don’t have a Healthy Human Tumbler, a mason jar works fine too, but just remember that it won’t be insulated, so it won’t keep your salad as nicely maintained as the Tumbler will.
We promise you, this salad won’t leave you feel empty and sad inside. It’s filled with savory and sweet add-ins that you’re going to L-O-V-E. We pack quinoa in this salad because it’s a nutritional powerhouse! If you want to sound like a boss when talking about this salad, make sure you nail how quinoa is pronounced. KEEN-WAH. Say it with us. KEEEEN-WAH. Isn’t that easy? Back to the good stuff. Quinoa has a great profile of vitamins, minerals and fiber. It’s not technically a grain, it’s a seed, so it makes it a great choice if you’re gluten-intolerant. You will want to cook it ahead of time or even the night before if you’re in a hurry.
Colorful and delicious pears and dried cranberries or cherries add a sweetness without refined sugar. Try to pick organic varieties when possible! You are also getting some sweetness in the dressing that contains maple syrup, so you can go easy on the fruit if you’re not really into too much sweet flavor. To even out the sweetness, the cut red onions, baby spinach and pecans come into play. Pecans are a great way to get in some extra protein and they also have a rich source of minerals like manganese, potassium, calcium, iron, magnesium and zinc. Just be sure to pick a healthy brand of pecans that aren’t coated with sugar or syrup!
If you would like a novice salad tip, here it is. Pay attention to your layering! If you are making this salad for later, make sure you put the dressing on the bottom and then the quinoa next, followed by your add-ins. The last thing you want to add to the mix is the spinach, so it doesn’t touch the dressing and give you a soggy surprise at lunch time. RECIPE SOURCE: Hummusapien
For the maple balsamic dressing:
- 4 tbsp balsamic vinegar
- 3 tbsp extra-virgin olive oil
- 1½ tbsp pure maple syrup
- ¼ tsp salt
- Freshly ground black pepper, to taste
For the salad:
- 2 tbsp maple balsamic dressing
- ½ cup cooked quinoa
- ½ large ripe pear, diced
- 2 tbsp pecans, chopped
- 2 tbsp chopped red onion
- 2 tbsp dried cherries or cranberries
- 2-3 cups baby spinach (or enough to fill the jar)
- 1-quart size (32oz) mason jar ** We used a Cruiser!
- Place all dressing ingredients in a bowl and whisk together until combined. (I blended mine in my nutribullet.) You’ll have leftover dressing.
- Place 2 tbsp of dressing at the bottom of a mason jar. Layer with quinoa and then top with walnuts, pear, onion, dried cranberries, and finishing with the spinach on top.
- Place lid on mason jar and refrigerate until ready to dump in a large bowl and eat!
