Here is where things get really fun! This Watermelon Rhubarb Gin Fizz is for adults only! Parents, your kiddos can’t have a sippy sip of this one. Just tell them that it’s a ‘vegetable drink’ and I am sure they will lose interest quite quickly. ? You won’t technically be telling a lie either, because you’ll be adding rhubarb into this drink! Rhubarb is in the plant family and its stalks have a naturally rich sweet-tart flavor. Awesome, right? When you think of rhubarb (which I’m sure you think about it all the time!) you probably think of rhubarb pies… but the crisp and juicy stalks can even be used in the preparations of sauces, preserves, jellies, jams, syrups, sorbets, juices and of course Watermelon Rhubarb Gin Fizzes! It’ll really impress your friends, we promise!
You will want to break out your blender for this recipe. If you have a Nutri-Bullet © or another single-serving blending machine, that will work out great if you’re not planning on sharing. If you are in the mood to be social and share with your buds, use a full-size blender and make a pitcher. Make sure you get seedless watermelon, so those seeds don’t get in the way of your sipping! Once you have blended the rhubarb, honey, water/club soda, lime zest/juice and vanilla in the blender, just pour it through a sieve or strainer before drinking to get any excess rhubarb pieces out. You can use either mineral water or club soda in your drink, depending on how fizzy you want your Watermelon fizz to be! - 2 cups diced seedless watermelon
- 1 cup chopped rhubarb
- 2 tablespoons honey
- zest of 1 lime
- juice of ½ lime
- ½ teaspoon vanilla extract
- 2 cups mineral water or club soda
- 6-8 ounces gin
- Place watermelon, rhubarb, honey, lime zest and juice, and vanilla extract in a blender and blend until completely smooth. Pour mixture through a sieve to remove the excess rhubarb.
- Pour mixture into a pitcher along with mineral water and gin. Mix to combine.
- Serve chilled over ice!
